Water can survive longer on a hotter pan
A droplet placed on a very hot surface can briefly float on a cushion of its own vapor. That vapor separates the liquid from the metal and slows heat transfer. This is the Leidenfrost effect: beyond a certain temperature, making the pan hotter can actually make the droplet evaporate more slowly.
