The Maillard reaction can tan ancient bodies

In cold, acidic peat bogs with little oxygen, the reaction slowly tans skin, can turn hair reddish, and contributes to the preservation of paleofeces. The same browning chemistry associated with cooked food can therefore help preserve parts of ancient bodies.
